Summer has always been a special time at the manor with all the flowers in bloom and our bees buzzing around collecting their pollen. I wanted to emulate this by creating a sweet cocktail with delicate floral notes of the elderflower to pair with the honey. This is then balance with a splash of lager and served in a clay hoey pot which was made for us by Potters thumb in Brighton.


  • 25 ml Honey comb Doorly’s XO rum
  • 20 ml Chase elderflower liqueur 
  • 20 ml Bee pollen syrup 
  • 100 ml Toast lager


Step by Step Instructions

Step 1

Begin by filling your honey pot or glass with cubed ice.

Step 2

add the rum, syrup and elderflower liqueur to the honey pot or glass.

Step 3

Top up with the lager.

Step 4

Give it a stir with either a spoon or a honey drizzler!
