Sipping tea and enjoying scones in our lounges has been greatly popular at Gravetye. I enjoy the many celebrations and family reunions I host over the afternoon period, so to capture this I created this twist on a classic french 75. Gin, sugar and lemon are combined and topped with Ridgeview bloomsbury and foam is added to created texture. It is then finished with a dusting of green matcha powder.
- 25 ml Earl grey Martin Millers Westbourne
- 25 ml Lemon juice
- 20 ml Oleo Saccharum
- 1 pippette Ms Better Bitters miraculous foamer
- top with Ridgeview Bloomsbury
Step by Step Instructions
Add the gin, lemon juice, Oleo and the foamer to a tin and dry shake for 6 seconds.
Open the tins and add ice to then hard shake for up to 10 seconds.
Double strain the mixture into a champagne flute.
Top up with Ridgeview until the foam reachs the top of the glass.
Dust the foam with green matcha powder and serve!
